Roasting for Flavours
This is the professional Roasting class explaining flavours in coffee you’ve been looking for!
This course uses all our experience roasting and consulting clients to summarise the key information that we are most commonly asked. There are so many theories out there but few have had experience on nearly every roaster on the market as well as roasting such a range of coffees (from award winning competition coffees to the basic commercial coffees for supermarkets). In this course we share our knowledge and tricks so that you can become a master of your machine.
We cover Maillard reaction, Caramelisation, Time of each milestone of the roasting process, Temperature, Drum speed, Airflow and how all this relates to the cup profile.

Sensory Development
This course is for beginners and professionals looking to build solid foundations of their sensory abilities.
Often one of the most daunting parts of the coffee industry is expressing sensory descriptions or opinions. This course is setup to help you not only become more confident about your ability but to also learn to embrace your weaknesses (yes we all struggle with some things). We will start from zero and work up to coffee scoring while developing and refining your abilities along the way. If you plan to take the Q exam or just want to share your experience this is for you.

Green for Buyers
The world of buying green coffee and knowing how to asses what you are buying is a tricky one. There are many codes and hidden terms that a lot of people do not know about. In this course we have taken our years of experience buying coffee, working with it at origin and at home as well as all the tough lessons we have learned over the years. The aim? To help you avoid the issues we had as well as understanding the realities of what is going on behind that offer list you are getting.

We will look at contracts, terminology, physical inspection of coffee and the realities of working with producers and trying to self import.

Learners will also gain an understanding of the basic structure of the roasting machine, and general maintenance and fire prevention and will get hands-on roasting experience controlling major parameters and analyse results.

Green Foundation
This introduction course is designed to give basic concepts regarding the consuming side of green coffee. Participants will learn about the specialty coffee supply chain from seed to cup, including cultivation, harvesting, processing, drying, shipping, storage, and delivery. We will also briefly explore the principles of coffee growing, processing, grading, trade and portfolio management, Ethics in supply chain.

This course aims to align the student with industry coffee and sensory standards, to acquire the skills required to start identifying and evaluating qualities in specialty coffee, and to accurately measure and describe coffee beverage characteristics.
